Roasted Sweet Potatoes
1 tbsp. olive oil
1 large sweet potato
1 tsp. brown sugar
Heat oil in a skillet. Meanwhile, peel potato and cut into chunks. Cook potato in oil, stirring occasionally, until tender. Add brown sugar and stir to melt.
Double Roasted Chicken
Work-time: 20 minutes
Total time: 40 minutes
1 quartered chicken (2 ½ ib.) skin removed
½ cup olive oil
2 tbsp. lemon juice (from 1 lemon)
¾ tsp. salt
¼ tsp. freshly ground black pepper
